Funnel cake is a popular fried dessert, typically served at carnivals and fairs, made by pouring pancake-like batter through a funnel into hot oil, creating a crispy, golden-brown, and often zig-zagged, lattice-like structure.  The concept can be traced back to the medieval Persian and Arab world, where similar yeast-risen dishes were prepared, which later spread to Europe. German immigrants, who settled in Pennsylvania in the 17th and 18th centuries, brought their culinary traditions, including a version called “Drechter Kuche”. Around 1879, Pennsylvania Dutch immigrants developed the baking powder version of the dish, which they named “funnel cake“. While the classic powdered sugar-topped cake remains a favorite, variations have emerged, including savory versions with cheese and herbs.
