INGREDIENTS

  • 5 oz. Butter, Softened
  • 5 oz. Brown Sugar
  • 2 1/2 oz. Sugar
  • 1/2 oz. Vanilla Extract
  • 10 oz. White Gluten-Free Flour
  • 10 oz. Oats
  • 1/4 oz. Baking Powder
  • 1/4 oz. Baking Soda
  • 4 1/2 oz. Egg, room temperature
  • 1 1/2 tsp. Xanthan Gum
  • 1/8 tsp. Kosher Salt
  • 12 oz. Diced Green apple, Sweated

GUIDE / INSTRUCTIONS

  • Add dry ingredients (Oats, flour, Baking Powder, Baking Soda, Xanthan Gum, Salt) to bowl and fold together until well incorporated.
  • Using a tabletop mixer with a paddle attachment, add butter and sugar (2 1/2 oz.) and mix until creamy consistency is reached. Add eggs, one at a time. Continue mixing.  Mix in brown sugar. Add vanilla extract. Slowly add dry ingredients into mixture at a slow speed until incorporated.
  • Add apple and continue to combine until all ingredients are fully incorporated.
  • Portion 2 oz. cookies on cookie sheet (with parchment paper) 2 inches apart using a heaping tbs.
  • Bake at 300F for 25 – 30 minutes. Let cool.  Enjoy!
