- Add dry ingredients (Oats, flour, Baking Powder, Baking Soda, Xanthan Gum, Salt) to bowl and fold together until well incorporated.
- Using a tabletop mixer with a paddle attachment, add butter and sugar (2 1/2 oz.) and mix until creamy consistency is reached. Add eggs, one at a time. Continue mixing. Mix in brown sugar. Add vanilla extract. Slowly add dry ingredients into mixture at a slow speed until incorporated.
- Add apple and continue to combine until all ingredients are fully incorporated.
- Portion 2 oz. cookies on cookie sheet (with parchment paper) 2 inches apart using a heaping tbs.
- Bake at 300F for 25 – 30 minutes. Let cool. Enjoy!
