INGREDIENTS

  • Unsalted butter for greasing
  • 2 C (480 ml) milk
  • 2 lg eggs
  • 3 T (37 g) sugar, divided
  • 2 tsp (10 g) cinnamon, plus extra for sprinkling
  • 4 lg apples, finely grated
  • ½ C (65 g) raisins
  • 4 stale dinner rolls, thinly sliced
  • 2 T (30 g) butter
  • ½ C (15 g) breadcrumbs

For the Ofenschlupfer
  • Preheat oven to 300°F (148°C). Grease an 8×8-inch (20×20 cm) baking dish with butter. Mix milk, eggs, 2 T (25 g) sugar and cinnamon together and set aside.
  • Working quickly, layer half the apples, half the raisins and half the rolls in the baking dish.
  • Repeat, ending with roll layer on top. Pour milk mixture over this; dot with butter and sprinkle with breadcrumbs, remaining sugar and cinnamon evenly on top.
  • Bake until golden brown, about 50–60 minutes.
