  • 3 oz. Red Onion, finely chopped
  • 3 oz. Red Bell Pepper, finely chopped
  • 1/4 tbsp. Jalapeno, finely chopped
  • 1/2 tbsp. chopped Cilantro
  • Butterfly 3 oz. Cooked Shrimp
  • 3 oz. Baby Scallops
  • 1 tbsp. Fresh Lime Juice
  • 1/2 tbsp. Fresh Lemon Juice
  • 1 tbsp. Rice Wine Vinegar
  • 1 pinch of chili flakes
  • Lime slices
  • Avocado, Sliced
  • Lettuce, finely chopped (half head)
  • Plantain chips (6)
  • Salt
  • Pepper

For the Ceviche:

  • Add ingredients together (Red Onion, Red Bell Pepper, Jalapeno, Cilantro, Cooked Shrimp, Baby Scallops, Fresh Lime Juice, Fresh Lemon Juice, Rice Wine Vinegar, chili flakes, Salt and Pepper).  Mix ingredients.

To Plate:

  • Place chopped lettuce in a bowl. Add 2 plantain chips, Ceviche mix, sliced avocado, slice of lime.
  • Serve and Enjoy!
