INGREDIENTS

Shrimp:
  • 6 qts water
  • 2 tbs Margaritaville seasoning salt
  • 1 lemon – halved
  • 2 bay leaves
  • 2 lbs peeled and deveined shrimp
Ceviche:
  • 2 lbs cooked and chilled shrimp
  • 1 cup lemon juice
  • 2 tbs finely diced Jalapeno
  • 1 ½ tbs Margaritaville seasoning salt
  • ¼ cup diced cucumber
  • ½ cup diced red and yellow bell peppers
  • 6 oz pico de gallo
  • 6 oz diced red onion
  • ½ cup chopped cilantro
  • 1 tbs olive oil

For the Shrimp Ceviche
Preparation for Shrimp:
  • Place all ingredients except shrimp in a pot and bring to boil.
  • Once boiling, add shrimp and cook for two minutes.
  • Remove shrimp and transfer to a bowl of ice water to chill
Preparation for Ceviche:
  • Chop the cooked and chilled shrimp and place in bowl.
  • Add all the ingredients listed and mix until fully incorporated.
  • Cover and allow ceviche to marinate in the refrigerator for two hours.
