INGREDIENTS

  • 3 oz diced boiled potatoes
  • 6 oz white fish chopped
  • 1 oz diced red bell pepper
  • 1 oz chopped parsley
  • 1/4 tsp dried thyme
  • 1 oz diced scallions
  • 1 egg
  • 1/2 tsp yellow curry powder
  • 1 oz potato flakes
  • 1/4 tsp pepper
  • hot sauce

For the Aoili:

  • 1/2 tsp cloves minced garlic
  • 1 tsp jalapeno puree
  • 1/4 tsp turmeric
  • 1/2 tsp yellow curry powder
  • 1/4 tsp jerk spice
  • 2 oz mayonnaise
  • 1/2 lemon
  • 1 pinch pepper

GUIDE / INSTRUCTIONS

  • Boil fish and potatoes together until tender.
  • Add fish and potatoes to a mixing bowl. Add 1 egg. Mix.  Add rest of ingredients (red bell pepper, parsley, thyme, scallions). Mix.  Add yellow curry powder, then potato flakes, then pepper, hot sauce. Continue mixing.
  • Form into 2 oz patties.  Fry in oil until golden.

Curry Aioli:

  • Place in a blender and blend ingredients together. Smear curry aioli on center of plate. Place fish cake and top with 4 oz pineapple salsa.
