INGREDIENTS
3 oz diced boiled potatoes
6 oz white fish chopped
1 oz diced red bell pepper
1 oz chopped parsley
1/4 tsp dried thyme
1 oz diced scallions
1 egg
1/2 tsp yellow curry powder
1 oz potato flakes
1/4 tsp pepper
hot sauce
For the Aoili:
1/2 tsp cloves minced garlic
1 tsp jalapeno puree
1/4 tsp turmeric
1/2 tsp yellow curry powder
1/4 tsp jerk spice
2 oz mayonnaise
1/2 lemon
1 pinch pepper

GUIDE / INSTRUCTIONS
Boil fish and potatoes together until tender.
Add fish and potatoes to a mixing bowl. Add 1 egg. Mix. Add rest of ingredients (red bell pepper, parsley, thyme, scallions). Mix. Add yellow curry powder, then potato flakes, then pepper, hot sauce. Continue mixing.
Form into 2 oz patties. Fry in oil until golden.
Curry Aioli:
Place in a blender and blend ingredients together. Smear curry aioli on center of plate. Place fish cake and top with 4 oz pineapple salsa.
